Pancakes with orange syrup and vanilla ice cream

Let’s be honest, pancakes are good. But pancakes with orange syrup and vanilla ice cream? Now we’re talking. If you're tired of the usual lemon and sugar toppings, it’s time to shake things up and give your pancakes a fresh, bold twist. This combination is sweet, tangy, and just a little indulgent which is perfect for when you're craving something a bit extra.

Ingredients

Orange Syrup:

 

Pancakes:

  • 1 cup self-rising flour 

  • 2 tablespoons sugar 

  • 1 egg 

  • 1/2 cup milk 

  • 2 tablespoons EAGER orange juice 

  • 1 tablespoon canola oil 

  • 1/2 teaspoon vanilla extract 

Method

Orange Syrup:

In a small saucepan, combine 4 tablespoons sugar, cornstarch and 3/4 cup of Eager orange juice stir until smooth. Bring to a boil and cook and stir for 2 minutes until thickened. Remove from heat and cool to lukewarm.

Pancakes:

Meanwhile, combine the dry ingredients for the pancakes in a bowl. 

Beat the eggs, milk and remaining orange juice; stir into dry ingredients just until moistened. Pour the batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until the second side is golden brown. 

To Serve:

Vanilla ice cream (because who doesn’t want ice cream with their pancakes?)
