Zesty chocolate orange truffles

Whether you’re treating a loved one, your bestie, or even yourself, these chocolate orange truffles make the perfect gesture of affection, with a personal touch that says, "I made this just for you." Seriously, who could resist?

How to make them:

Ingredients:

  • 250g 72% or higher dark chocolate
  • 125ml EAGER orange juice
  • 150g golden caster sugar
  • The zest of 1 orange
  • Tempered chocolate and cocoa powder for finishing (if you want to get fancy)

 

Method:

  1. Start by chopping your dark chocolate into small pieces and placing them in a bowl. You want to make sure it melts evenly, so small pieces are key.
  2. In a saucepan, combine your EAGER orange juice, sugar, and orange zest. Bring it all to a gentle simmer for about one minute. This step is where the magic happens—the orange zest infuses the juice, giving it a fragrant, citrusy punch.
  3. Pour the orange juice mixture over the chocolate, and whisk until the chocolate is completely smooth. The warmth of the juice helps the chocolate melt perfectly, creating a silky ganache-like texture.
  4. Transfer your mixture into a food container (a shallow one works best for easy scooping). Let it cool at room temperature, then pop it in the fridge for at least 4 hours. The mixture needs to firm up so you can roll it into truffle-sized bites.
  5. Once it’s set, use your hands to roll the chocolate mixture into small balls. For that finishing touch, coat the truffles in tempered chocolate or sift some cocoa powder over them for a dusting of decadence.
