Sliced, diced, roasted or boiled – carrots are a must-have on any roast dinner plate. But have you ever tried glazing them with orange juice?
This is one culinary hack guaranteed to supercharge the veg in your Sunday lunch. Sweet, buttery, citrussy and sticky, you can experiment with using honey or herbs like thyme to get them tasting just right.
They’re also really easy to prepare – you can make them on the hob, in the oven or even in a slow-cooker. Here are our top three ways of making orange glazed carrots…
Roasted orange glazed carrots
To make these super-sticky glazed carrots, preheat the oven to 200C/180C fan. Using a small saucepan, combine the Eager orange juice, brown sugar and butter and cook on low until the sugar is dissolved and the sauce has thickened.
Place the carrots on a baking tray, drizzle with olive oil and season them with salt and pepper, then pour the orange glaze over the carrots and cover them with foil. Bake for 10 minutes. Remove the foil and bake for another 10 minutes or until the carrots are fork tender.
Ingredients (serves 3):
- 3 tbsp Eager orange juice
- 50g brown sugar
- 2 tbsp butter
- Carrots, peeled and sliced
- ½ tsp salt
- 1/8 tsp pepper
- Extra virgin olive oil
Orange glazed carrots on the hob
Really simple to make (and with minimal washing up!) these glazed carrots cook on the hob in just 15 minutes.
Start by boiling the carrots in water until tender, drain and return to the pan. Then pour the Eager orange juice over the carrots, mix well and simmer over a medium heat for 3-5 minutes. Stir in the brown sugar, butter and salt, and cook until everything’s melted in.
Ingredients (serves 4):
- 450g baby carrots
- 60ml Eager orange juice
- 3 tbsp brown sugar
- 2 tbsp butter
- 1 pinch salt
Slow cooker honey orange glazed carrots
If you have a bit more time on your hands, these honey and orange glazed carrots are perfect for the slow-cooker.
Pop the carrots, Eager orange juice, honey, salt and butter in the pot, cover and cook on low for 6-8 hours or until tender. Then just stir in some grated orange zest and serve.
Ingredients (serves 10):
- 900g baby carrots
- 2 tbsp Eager orange juice
- 170g honey
- ½ tsp salt
- 2 tbsp butter cut into pieces
- ½ tsp grated orange zest
