See in the summer with these cocktails with pineapple juice

Spring has well and truly sprung, and so naturally, it’s that time of the year when we want our cocktails sweet and refreshing.

And pineapple is the perfect flavour for that looking-forward-to-summer feeling – drink it for a taste of those holidays and warmer days to come.

So we’re giving you a rundown of three of our favourite cocktails and mocktails with pineapple juice. We’ll start with a real summer staple…

Piña colada

This tropical treat is a classic for a reason. You probably know what you’re doing with this one already, but we couldn’t talk about pineapple cocktails without talking about a piña colada.

Ingredients:

Pulse all the ingredients along with a handful of ice in a blender until smooth. Pour into a tall glass and garnish. Or for a frozen version, mix your Eager juice, rum and coconut cream together, then freeze in ice cube trays. Add these frozen cubes to a few ice cubes in a blender, and blend until they reach a slushy consistency. Serve and enjoy!

Spicy pineapple margarita

 

 

Spice things up with this delicious twist on the traditional tangy Marg. OK, so the recipe may look long, but no fear – it just has three delicious elements that come together for something spectacular. After all, what’s a margarita without the salt rim?

Ingredients:

  • 90ml tequila
  • 30ml Cointreau or Triple Sec
  • 120ml Eager pineapple juice
  • 30ml lime juice
  • 2 chilli peppers
  • 250ml water
  • 280g sugar
  • 30g salt
  • 15g tajin/chilli and lime seasoning
  • Ice

First, make a simple spicy syrup by pouring the water and 250g of the sugar into a saucepan. Slice the chillis in half lengthways and add to the pan. Stir and heat the mixture on a medium-high heat until it simmers and the sugar has dissolved. Allow the syrup to cool, then strain to remove the chillis. You’ll need about 10ml of syrup per cocktail.

Then make the salt rim by mixing the salt, tajin seasoning and 30g of the sugar and spreading this mixture on a plate. Moisten the rims of your chosen glasses with lime juice, then rim the glass by rotating each glass upside down in the mixture on the plate.

Next step. Fill a cocktail shaker halfway with ice then add the tequila, Cointreau, spicy syrup, pineapple juice and lime juice. Shake until the shaker feels cold and is frosty. Finally, fill each glass with ice. Strain the cocktail equally into each glass. Garnish the cocktails with a wedge of pineapple and a red chilli or wheel of jalapeno.

Pineapple ‘martini’ mocktail

Whether you’re the designated driver, looking to include your kids in the cocktail-making fun, or just pacing yourself, try this one – a non-alcoholic option that means no-one has to miss out, with no less than two classic Eager flavours. And if it’s still not sweet and summery enough for you, you can turn it into a float.

Ingredients:

Shake the juices with the mint leaves and ice in a cocktail shaker for 30 seconds. Strain into a martini glass and garnish with the orange slice and shredded mint. To turn into a float, just add chopped pineapple and a scoop of vanilla ice cream.
