Summer’s knocking, and we’ve got the perfect way to answer. Cocktail shaker in hand, Eager juice in the other. Meet your new go-to drink for garden lounging, and sunny-day sipping: the Pineapple Sage Martini.
Why do the chopping when Eager’s got you?
Who really has time to chop fruit, juice pineapples, or clean up the mess afterward? Not us. That’s why we’re reaching for our Pineapple Juice.
Ingredients:

100ml Eager Pineapple Juice
- 100ml infused sage & cardamom gin (see below)
- 25ml lemon juice
- 20ml clove syrup
- Ice
- 50g caster sugar
- 4 whole cloves
Fresh sage leaves (to garnish)
Infuse the gin

Add the cardamom and sage leaves directly into the bottle of gin.

Let it infuse for at least 3 hours (or up to 24 for a stronger flavour), swirling occasionally.

Strain through a fine-mesh sieve, discard solids, and return the gin to the bottle.
Make the Clove Syrup

Combine 250g caster sugar, 250ml water and 4 whole cloves
a saucepan.
- Bring to the boil, then reduce to a gentle simmer for 10 minutes, stirring occasionally.

Remove from heat, discard cloves, and allow syrup to cool completely.
Shake and Serve

In a shaker, combine:

100ml infused gin

100ml Eager Pineapple Juice

25ml lemon juice
-
20ml clove syrup
- A handful of ice
- Shake for 10–15 seconds.
- Garnish with a fresh sage leaf and serve immediately.
